Food For Forty!

Alright everyone, its week two of food for forty here. I’m going to try a little bit of a different format this week and include a grocery list for you. Hopefully that will make it a bit easier for you to stock up on what you need! This week there is tons of Italian food which, in my opinion, is some of the best food around.

Dinners
Ravioli with Grape Tomatoes and Wine
(Cut the recipe for the sauce in half and only cook about a cup of ravioli. I also cut out the parsley but you can definitely add it back in if you’d like!)

Shaved Asparagus Pizza
(Make the whole pizza and eat the leftovers for lunch the next day!)


Ravioli with Bacon and Peas

(Again, cut the recipe in half and only use a cup of ravioli)


Grilled Cheese with Tomato and Bacon

(Use your leftover tomatoes and bacon to make this classic food with a twist. Seriously, who can go wrong with grilled cheese? No one, that’s who. This recipe makes four sandwiches but you really just need to make one. Use two strips of bacon, two slices of cheese, and a slice or two of tomato and you’ll be golden. Enjoy!)

Breakfasts
Bacon and Eggs (Simple enough, make your favorite kind of eggs and fry up some of that leftover bacon!)

Get creative with your breakfast. I find that mixing leftover veggies with eggs is the best way to use up ingredients and make a healthy/delicious breakfast!

My grocery tip this week is to buy exact amounts of ingredients whenever possible. If you have a whole foods, they do a great job of this. They have many specialty ingredients in bulk so you can buy exactly what you need for your recipe. That way, you spend less money and nothing goes to waste!

Grocery List
– 1 bag of dry mini ravioli
– 1 pint of grape tomatoes
– white cooking wine
– 1 shallot
– Bacon
– 1 package of frozen peas
– Extra Virgin Olive Oil (always keep this on hand!)
– loaf of bread
– A few slices of American Cheese
– eggs (if you eat them every day, get a dozen, otherwise, just go for 6)

note: I did not include any of the pantry items in the grocery list as these are things most people generally have on hand. Be sure to check your cabinet/fridge for all ingredients before you go grab your groceries just in case! I am also working under the assumption that lots of you are cooking for one, so in many cases I cut recipes in half or use leftovers as lunches so if you’re cooking for others your food might not get you as far. That’s okay though because cooking for friends and loved ones is great :).
