One of my favorite restaurants in Arizona is Pomegranate. My mom and I have been patrons of this sweet vegetarian spot since they first opened their doors and I’ll keep going back as long as I’m local. A mother-daughter team runs this restaurant and they offer everything from delightfully well-prepared tofu to perfect lattes and the most gorgeous desserts you’ve ever seen. Last week my mom and I stopped by for a quick breakfast and I was thrilled that I could finally feature Pomegranate on Eating Arizona.
I ordered the breakfast tacos which featured scrambled tofu (I’m kind of on a scrambled tofu kick recently), fresh veggies, and are served in the best tortillas I’ve ever eaten. Top it off with some salsa and you’ve got yourself a beautiful breakfast.
Some of my other favorite dishes from Pomegranate include their Bountiful Bowl, Pommes Frites, and the daily quesadilla (which is technically a special but is always amazing). I love it here because it’s always wonderful, healthy, and FULL of people. It’s a bit off the beaten path but absolutely worth the trek.
